I use House Autry Fish Fry, Good Stuff !!!!!!!!!!!!!!!! I have also used the House Autry Seafood Breader, but prefer the Fish Fry !!!!!!!!!!!!!!!!!!!!!
Good fresh fish... corn meal, salt, and sometimes black pepper.
Need to cover up a little fishy taste or frozen...
Yellow or white cornmeal or sometimes cornbread mix.

a little less lemon pepper than the Tony's
A little less garlic powder than the lemon pepper.
A good dash or two or three of (if you dare...) Accent or MSG. I know this is taboo but it makes everything come alive in fried foods.
There used to be a mix here called Bearden's fish fry. Don't know if it is still around but it was developed by a friends family. They had hundreds of acres of catfish ponds in the Mississippi Delta and they knew a little something about frying fish.

We used zataramans from SAMs then sprinkled paprika on it this weekend. Mannnn that was tasty.
I use Rice flour. Put a few tablespoons in a bag, put rinsed fillets into it a shake it around, cook in Coconut oil, at 350F , once done stand them side ways in a roasting dish and put them in the oven for 5 minutes at 300F for 5 minutes, they are to die for.
3/4 c meal, 1/4 c flour, garlic powder til you smell it, tsp or 2 black ground pepper, tsp lowery's, several shakes of lemon pepper. ground sage until you JUST smell it, don't over do it. Then add garlic again.... I usually use a egg wash but condensed milk works well too.
