I always use Plain Yellow Corn Meal and some salt..... I have tried ALOT of other brands and types of seasoned meal and I prefer cooking them in plain yellow corn meal mixed with salt and ALWAYS have the Can of Cavender's Close by when they are done!

I like to make a batter out of a oninon ring mix or something like it then coat it in Louisiana fiish fry and enjoy. I use beer to make the batter, that is if I haven't drank it by then...lol
lefty's spicy with enough water and flour to make a batter. absolutely great! batter doesn't burn in the oil. dredge the fillets beforehand or not.

In a large paper bag, put 3/4 stone ground corn meal, 1/4 all purpose flour. Add salt and pepper to taste. Drag Crappie filets through a mix of egg and milk, drop in paper bag and shake. This is my #1, but Zataran's is my back-up
I use Louisian seasoned mix (the blue pack) and add about a 1/4 bag of Nonna Bells Hot mix with it. It is by far the best combination I found so far. I told all my fishing buddies about it and they all like it too.
Slayer: What is Nonna Bells Hot Mix? I looked for it on the internet but came up empty. Do you have a recipe for it?
It is actually spelled Nona Belles. It is the hot spicy mix. It is made in Corning, Arkansas by a company called Sam and Sams Products. I just pulled it up on the internet with the correct spelling and it was listed and how to order it. Hope this helps. It is a good mix with Louisiana seasoned batter. I mix the 2 together and use my batter bowls to coat the fish well.
