    First you nail the bowfin through the head onto a maple plank.

    Then you pull off the skin. Bake it on the maple plank @ 250f for two hours.

    Then take it out of the oven, throw away the bowfin, then eat the board!!!

    I too caught one of them thangs while crappy fishing at Greenwood. It was a fight. And it was ugly. Good report.

    I catch and release. I like to catch gar too. I love big toothy hard fighting fish. Actually I love catching any kind of fish, but the toothy critters add a little more adventure to the trip.

    Opinions vary on eating them. I've never tried them. They eat them in Louisiana, but those Cajuns will eat anything with enough hot sauce on it.

    Most of the recipes I've seen involve making patties with bread crumbs and potatoes, which tells me the texture of the meat must not be too good.

    Fish for them like you would for B*$$...just hold onto your rod tighter. They fight much harder than those over-rated over-grown brim. 'course I don't have to tell you that as it sounds like you've hooked your share of them.
