Here I thought I had cooked crappie in every manner possible.....and I stumble upon this bacon wrapped crappie on the grill recipe....I will be trying this tonight. I have done a similar recipe with big shrimp. Take the biggest shrimp you can find, wrap em in bacon, and I use a big propane griddle out on the deck to cook em up. Throw some bbq sauce on em while their cooking and they are wonderful.

Well I tried the bacon wrapped crappie and added some Sweet Baby Rays sweet'n'spicy bbq sauce and sprinkled a little chipolte sauce on top......Now wannabe may wanna fling some pooh because I now disagree, there is another method to cooking crappie that does not include frying. They were awesome!!!

    Red Beans And Rice

This is a recipe we came up with when I worked on the railroad. We stayed in a dorm in New Orleans and we cooked what we ate. The main ingredient for this recipe is the "Blue Runner" beans. It's cream style and makes a good thick gravy. Our local Wal Mart has them now.

    2 cans Blue Runner beans
2 cans store brand red beans
    1 can Rotel
    1 large onion, cut up
1 large bell pepper, cut up
    1 tsp chopped garlic
    1 lb smoked sausage, sliced
    Cooked rice

Place sliced sausage on a cookie sheet and brown in oven at 350. Mix other ingredients in large pot and bring to a simmer. Add sausage after browned. Salt to taste and simmer for an hour or more. Serve over rice with garlic bread.

Sounds good, never heard of those beans before. I put a little brown sugar in mine.

Try this sausage. They make a smaller version packed in sheep casing that's really good.

I have had these and they are fine Scott. I like to grill em also and cut into bite size chunks as appetizers.
