If I did it that fast I wouldn't have any fingers left.

    That’s getting with it !
I have tried the manual several times with little success!
I want to keep my fingers as well ! I guess I’ll stick to the electric!
but I am stickler about starting way up close to the head to get the thickest part of the fillets!
    great job!
    Too blessed to be stressed!

With a sharp knife and average sized 11 to 13'' Crappie I can do it in a minute each when not distracted . But started doing this in early 1970's after reading about it in a fishing magazine . Dad had to be convinced I was not wasting fish . Then had to teach him . We stopped at local cleaning station one evening and light was out . My woman said what now ? Told her hide and watch . Did it in the dark . But I have close to 50 years of practice .

I went on a saltwater trip a few years ago . Everyone waiting in line to have deckhands clean their catch . I asked them if they had another knife . They acted like I could not do it . They were surprised, but they cut through ribs unlike my method .

If that method pulls the pin bones, I'm sold!

Pull at the point they stick out off ribs. But so small hot oil does away with any you miss.
