    Thought I'd share my smoked fish dip recipe, everyone who tries it loves it, bet you will too. I start by brining about 10 nice crappie filets in salt and sugar for about 20 minutes, then I rinse them, pat dry and spray with cooking spray. Next I coat them with lemon pepper and put them in the smoker for about 1 1/2 hrs with hickory. Let the fish cool until firm in the fridge, then shred in a food processor. In a large bowl I will soften 2- 8oz cream cheese, add 1 cup sour cream and 1/4 cup miracle whip salad dressing. To this I will add 3 stalks finely chopped celery and one medium onion, 1/4 cup dried parsley, 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/8 tsp cyan pepper. Now fold in your shredded fish and aprox. two tsp tapatio hot sauce. You can add more or less hot sauce to your own tastes. We usually spread on town house crackers or something similar.     Last week I tried a new blend for the fellowship dinner at church, they ate every last bit and told be it was even better than the previous recipe. Here is what I changed. The crappie was prepared the same way as above, but the mix is a little different. Use 2-8oz cream cheese softened, 1 1/2 cups miracle whip, 1 tbl hickory flavored liquid smoke, 2 tbl lime juice. To this add 2 minced jalopenos, 6 stalks diced celery, 1/2 large red onion diced fine, 1/2 cup parsley flakes, 1/4 tsp onion powder and garlic powder, and one tbl tapatio hot sauce. Lastly fold in the shredded smoked fish. Let this mixture rest in the fridge overnight to let the flavors meld, then serve with your favorite crackers. You can also sprinkle some papreka on the top for some color.

    I like this idea a lot and will try this weekend! I smoke salmon and steelhead often and the family likes it. I seem to be the only one in my family that likes to fried crappie. Now I have a new option that all should enjoy.

    Sounds good, will try this soon.

    Healthier substitutions: Plain Greek style yogurt instead of sour cream. You can't tell the difference. Olive oil mayo instead of miracle whip. Healthier fats.
