I've always enjoyed soaking the fillets in egg and then rolling them around in crushed up saltine crackers.

I mix one box of complete pancake with one bag of McCormicks seaoned or Zatarains seasoned.Soak fillets in cold water then coat in mix and into the deep fry.I use the same mix on okra and have had people tell me it is the best fried okra they have ever had.
To make life enjoyable, you must have crappie days.
