I like mine as REAL grits, not instant or quick cook...I order my grits from Nora Mills Granary near Helen, Georgia. They call 'em "Georgia Ice Cream".
Stone ground with water from the Chattahoochee River, they don't remove any of the germ of the corn. These taste like grits, not a cardboard box.
When making shrimp n' grits, I use 2 cups milk, 2 cups salted water and 1 cup grits. Watch 'em close or they will boil over. Once they are good and creamy, add sharp cheddar cheese to melt. Saute your shrimp in real butter, add a little garlic and a pinch of cayenne. Put this over a puddle of grits, and put some chopped green onions on top. Careful, cause your tongue will beat you to death!!!

I like the traditional grits cooked with a little cream served with eggs and sausage (real country link sausage, not some of that stuff they call sausage in the grocery store)
But I also like yellow grits with country style steak and gravy for dinner. That is a fine meal also.
