    Default Healthy eatin for a change....


    Got a few nice crappie last weekend on Wateree and decided to cook em a little different. Sauteed with a little butter n a skillet and then finished in oven till fork tender. Also sauteed some zuchini and red bell peppers. Mixed some home made pico da gallo with some cabbage and mayo for what I call pico da slaw on the side as well! Pretty darn good...Now gotta catch some more!!

    If you haven't already, check out the "Baked Parmesan Crappie" in the menu forum. Nothing tastes as good as fresh fried fish, but this is the best non fried recipe I've tried. Like your Pico slaw recipe, will give it a try.

    Thanks guys! I love me some fried crappie too but I gotta loose a few more pounds! Fried on weekends and grilled or baked during the week may work....Sea Ray I have tried the baked parmesan, its pretty good too!

    Do not overlook Blackened crappie. It's right there with fried for me and the wife. In fact I blacken more than I fry.
    Cast iron skillet very hot
    Rub a little squeeze butter on fillets. Spread seasoning on fish. Couple minutes each side.

    That looks great! Ill have to try that one for sure. I like most anything blackened, but with my cooking it sometimes just happens on its own!! lol

    both of those would be "better for you" if you ditched the butter and sprayed them with Pam. Just saying...
