Hobie makes a nice boat, never used one but have seen them on the water, pretty sure a trolling motor can be added
If you could find an old Coleman Crawdad it's 11' 6" plastic and you can do anything in it. Floatation is good and pretty stable. Can run small motor or trolling motor. I had one back in the 80's, used it in the ponds in NJ. Go where a lot of other can't. But now days it may run from 400 to 1100 dollars depending on condition.. They don't make them any more. Never had another due to moving around in the military. Hope you'll find something that suits your needs.

I have a pelican it is great! you can wire the trolling motor to a hot foot and plug it in the front of the boat where it has a connector port for the battery. The only down side is when you take it off the truck you need to set it as close as you can to the waters edge. If you drag it on the concrete or rocks it wears the bottom up fast if you do not watch it. also they recommend to store it off the ground on saw horses because of the weight of the boat on the ground could damage the plastic bottom of the boat if it was laying on something hard.
had a basshound since 2000 and have filled it up with bluegill and bass, has a livewell and put TM front or back, has plugs for both. Newer ones I have seen are laid out better, have place for trolling battery and livewell and easy to handle. see them on Craigslist for few hundred dollars and with trailers and gas motors on them. worth it.
