    Thumbs up The Other White Meat


    I pretty much have been on just a crappie diet when it comes to fish for the past several years now. Last summer I made a trip after catfish and got lucky landing a few fish so I kept a couple of fish that were larger than I woulda kept usually (teenage fish) to make nuggets out of 'em and vacuum sealed and froze. Last night I cooked a mess of those nuggets and I want you guys to know they were some more good. I even pan fried 'em like I've been doing with crappie fillets as of lately and thought that might be a mistake since the nuggets were thicker...but they turned out great.

    So to all you guys that are being bothered by the thugs when crappie fishing, I just want you to know there's nothing wrong with skinning a mess every now and then. Besides, the way the crappie have been biting the past couple weeks those cats might be first in line to being "the other white meat.":D

    I was going to tell me the WP (white Perch) was starting to bite!

    I agree also too they are good and I will filet them just like the crappie and don't have to worrie about skinning the either. For me them Channel cats are the least of my favorites to eat but we caught one @ 6lbs last friday and I brought him home a stewed him saturday and it was good.

    You might be on to something with catfish the other white meat.
    If you don't get hung every-once-n-a-while you ain't jigg'n it right..:D

    You are right Bowman, they are good eating. I keep a few of the 1 to 2 pounders and fillet them also. Easy to do with a good knife. After they are cooked you can't tell them apart. :D The wife don't like catfish, she thinks!!:rolleyes::rolleyes::rolleyes:

    If you have notice the price of catfish and catfish filets in your grocery store latley you would think you were eating beef.... Don't get me wrong i love my crappie but i won't hesitate in bringing that catfish home , feleting and deep fat frying him.

    De'm catfish is good. Deep fried or pan fried. as long as they are fried some way.

    One of my favorites,:D:D

    Spicy Catfish with Bell Peppers and Onions

    Ingredients
    • 2 6-ounce catfish fillets
    • All purpose flour
    • 2 1/2 tablespoons vegetable oil
    • 1 medium onion, sliced
    • 1/2 large red bell pepper, thinly sliced
    • 1/2 large green bell pepper, thinly sliced
    • 2 1/2 tablespoons white wine vinegar
    • 1 tablespoon chopped drained canned pickled jalapeño chilies
    print a shopping list for this recipe

    Preparation
    Season fish with salt and pepper. Dust lightly with flour. Heat 2 tablespoons oil in heavy medium skillet over medium-high heat. Add fish to skillet. Cook until golden brown and just opaque in center, about 4 minutes per side. Transfer fish to plates. Add 1/2 tablespoon oil, onion and bell peppers to same skillet. Sauté until crisp-tender, about 4 minutes. Add vinegar and jalapeño. Stir 1 minute. Season mixture with salt and

    My only beef excuse the pun, is cleaning the thugs. I have not found yet a good way to clean them. I butcher excuse the pun a lot of meat. I have a problem fileting down the backbone.

    what type of knife are you using?i do mine two ways depending on my mode sometimes i fillet mine with a electric fillet knife it does a good job,but if my wife is watching she does not like to see any meat left on a bone i will skin them then get the manual fillet knife and cut of the bone that way!!
