Colors of things they eat in the natural environment. Olive, brown, black. I tend to stay away from metallic or bright colors. Tie with a contrasting color of thread such as red or white for a little flash. That's just how I do it but I'm no expert.

One of the original bream gitters that I remember seeing were a black head and a short squirrel tail. Found them in TJ Stallings Dad's shop. They've no doubt been mass produced or spread around. Ronnie Stallings at TTI Blakemore might be able to shed a little light on what they were. Folks would buy them by the card.

I will take what DBD has except substitute tan/brown in place of chartreuse.
I have been doing some searching.
Seems toot sure the colors that come up the most are the colors black, natural green(olive) and for some reason red.
There's not allot of info out there on tyed jigs or jig patterns, colors for them.
