Not sure about the rub, cause like everyone else I've always fried them. It is interesting "not to mention healthier" to try grilling. I believe I would boil them first, possibly in chicken broth to season and to tenderize. Then rub down with some olive oil or maybe bacon grease. At this point experiment with several dry rubs on different pieces till you get something you prefer. You could possibly slow cook them in a crock pot instead of boiling.
