    Couple had the big hump on their heads but they weren't real big. 8-10 pounds maybe on the biggest. They were schooled up in some floating grass

    They're called Chicken Dauphines. They and the Trigger fish are some kind of good eating!!

    Smoked Barracuda

    Ingredients

    • 2 one pound boneless barracuda fillets, skin on
    • ½ cup low sodium soy sauce
    • 2 Tbsp brown sugar
    • 1 Tbsp ground ginger
    • 1 Tbsp minced garlic



    Instructions

    1. Mix marinade ingredients into resealable plastic bag, squeeze or shake to mix.
    2. Add barrracuda fillets to bag, one to two hours before ready to smoke.
    3. Fire up coals for smoker 30 minutes before ready to smoke
    4. Add barracuda to smoker grill
    5. Add wood chunks/chips (I used hickory, but pecan would be good as well) to fire box or charcoal.
    6. Smoke about an hour at about 225 degrees. Should break/flake when bent if it is done.

    Sounds like one of those cedar board deals. The filet is just a carrier for the spices. Is that not a dark meat?

    We went to one of the hotels while there. Some of the plants from the 8th floor had to be trimmed every few days so you wouldn't walk through them in the lobby.
    Some good eating there, hope you can pack it to bring home.
    My carry on bag coming home was nothing but bottles, 136 lbs.

    Couldn't keep the fish. But was still fun. I figure the captain sold the fish to make a few extra bucks
