You could take the vent off from the outside. Cut out what you wished and put the vent back on
In the process of venting bathrooms fans outside, noticed this.
Inside picture of the opening. That is a 2x4 in the middle of the opening. Opening is only about 1.5” wider than the 2x4.
Am I wrong for thinking the cutout needs to be bigger?
If the opening needs to be bigger, how do I go about it? Set the saw for the thickness of the sheathing? My fear is cutting the insect screen. Just put more screen over it? Mend it back together?

That appears to be an attic vent - leave it alone. Proper ventilation is necessary to address excessive heat and moisture. Serious roof damage may occur.
Venting your bathroom/kitchen hood vent should be elsewhere. Such as with your dryer vent.

If your gable vent is much much bigger (like I think it is) than that little 6" X 6" hole then you definitely need to remove that press wood making the hole about as big as the vent is. I would set the saw a little less than the thickness of the sheathing and break the rest out (if that makes sense.) You may could use a vibratory saw to do the rest. Make sure your screen wire is good to prevent bats and the like from getting into your attic.
