    Default Knee-deep in asparagus. Recipe ideas search.


    Guess that says it pretty much in the title. Like mine steamed with butter , S&P. Hollandaisse sauce. Creamed, over pasta or toast.
    Have been to Cooks.com, lookin for original kid-tested, mutha-approved recipes.

    Must really be hard up for ideas to offer such fine quality gifts to the winner! But can you deliver on the prizes. That second one is going to be a little hard to produce I would think. But here goes- The only way I like Asparagus is steamed with salt and pepper with butter melted over it.

    take asparagus and place in a foil pan on the grill, olive oil, season salt and a touch of butter. saute on grill until tender, my wife hated asparagus until I showed up this, no we eat it alot.

    I also do mine on the grill but I do not use aluminum foil. Rub the asparagus with olive oil, add your favorite seasoning then place directly on the grill grate. Cook over apple wood that has been soaked for several hours in water then placed on the hot coals. This will allow the apple wood to smoke without going into flames, preventing burning of the asparagus. Roll the asparagus regularly. When the asparagus becomes slightly darker, rich green color with a few charred marks, and can be easily cut with a fork, but are not mushy, they are done.

    Now Jeffro,you bein from the south (now),why would u want it any other way except rolled & fried/deep fried whichever u perfer.Everythin tastes better fried/deep fried & we all know this lol

    This is workin out perfect cuz I almost asked specificly about grilling.
    Bluegill- what the.......Joan Jett, Blue Oyster Cult.....?????????? At the ASPARAGUS FESTIVAL? Jus kiddin, had the Kentucky Headhunters at a little marina on the Chickahominy River just down the road.

    The wife puts them in a glass pan with water puts them in the microwave. um um good

    Pre-heat oven to 500 degrees or higher, the higher the better. You are gonna ROAST them. Get a great big cookie sheet. Take as many asp that will fit on it in a single layer and of course break each one at the end to find the tender point in the stalk. Place them on the sheet in single layer. Drizzle with olive oil and kosher salt and fresh cracked pepper. Pull the sheet back and forth slowly and the asp will turn over themselves letting the OO and S&P get all over all sides. Place them in the preheated over. In about 4 mins they will be bright green. In about 7 mins they will start to carmalize as the natural sugars are drawn out and cooked. Pull the pan back and forth to cook evenly and leave in oven about another 3-5 mins until all are DARK GOLDEN BROWN on all sides. Then get you some of that and report back what you think. Make sure the sheet is on the second lowest rack location in the oven, not the lowest but the second lowest.

    Also, make a bunch this way and take the lefgtovers and cut up. Add to pasta, as a pizza topping, in a sandwich instead of lettuce, etc, or they are good cold too. Lake lays tater chips can't eat just one. It's really good as a filling to my stuffed bread in the COOKING section.
