After digging down deep under the Sac A Lait filets I found what I was looking for. A gal ziplock bag full of Pouldeau gizzards and hearts. You guessed it gizzard gumbo with fresh elk sausage and smoked wild hog sausage. Ca c'est bon Just in time for the Saints Game.That is one overlooked bird we killem early before they start getting to fishy. Easy to pull the breast out with a gizzard as big as a rolled up fist. What are Ya'll having for dinner?

Once way back when I was a kid I killed one of those, when I tried to clean it that's when I found out you need a pair of pliers to pull the feathers out of that bird. We put both in the pot then through the bird away when the pliers got tender.
