Bud thanks for taking your time to film cleaning a fish. Slower knife work is a pain. Thanks. Very unique execution, no messy guts to deal with. We have always cleaned our big saltwater fish your way but making one cut behind the head all the way down first and removing the ribs with everything else. That is only because the big fish backbones have such a large diameter you leave a bunch of meat just old school filleting. The commercial fisherman clean that way too, selling fillets by the pound they want more to make it to the scales.
