I ended up buying a new 1-1/8” x 54" shaft from a Minn-Kota service center for about $30 to replace the steel plated shaft that is too short.

I just did the same today. I had an old Minn Kota 34W I got from my dad. Removed the head and the motor. I'm picking up a PS-22 transducer in a couple weeks in my way up North to fish. I have Attwood rod holders in the rails of my boat. So, I made a mini transom and drilled a hole in the bottom. The toolroom where I work made me a short shaft out of delrin that presses in to the hole and slips in to the rod holders in my boat. The only problem is that I don't think the shaft will be long enough to be submerged in the water. I'll have to make an extension rod the goes in the bottom of the trolling motor shaft.
