    For breading I use the Louisiana seasoned in the blue bag. For batter I use golden dipt beer batter and add dried garlic and cayenne to taste. 40 years now.

    Seafood at my house always gets Zatarains seasoned fish fry with lemon.

    I slather them in mustard and shake them in Zatarains seasoned fish fry. Also add a little Tony's seasoning to the mustard. Perfect every time. No mustard taste at all. I even fried chichen tenders and wings like this , just to try. Perfect. Both available at Walmart and plenty other places. P.S. I like your name. Mine is Daniel David.
