Are you going to mount any below the water line? Surface reflection will prevent about 1/2 the light from entering the water. Dont forget to invest in a Thermacell for those above water lights.

I think it will be OK they can be brightened and dimmed to suit your needs the pics are of them on bright

As far as lights go on the outside of the boat I would only mount them below the waterline. The one on the inside can be turned on as needed for baiting/lure changes or locating items. For that perpose you could have short led lights.

The standard whote LED lights have two wires at the ends. One positive and one negative. If you get the RGB LED's there is a small power box that plugs into the lights and the power for the box is a plug that has two aligator clips on the end that can be attached directly to battery or you can cut the wires and wires them in solid. Your choice. Just make sure when you buy the RGB led's that you check the power connection that comes with it to wire to 12V.
with the samll power box there is a remote sensor to use the remote control for the RGB lights. You use the remote to change colors and speed and brightness.
