Cleaning & cooking jackfish
I have always thought of jackfish as a trash fish but I have noticed on here alot of you keeping them or even specifically going after them.
Any special ways to cook & clean them?

Friends don't let friends eat trash fish,,,,,,,,,,, or Jackfish. I think FM is the only one that keeps em and he's not right if you know what I mean. If you look back at his posts you can see, he'll cook ANYTHING! The only good thing about Jackfish is when nothing else is biting, you can put on a white spinnerbait and always catch them for fun. Caddo is full of em! Seeya, Don

delicacy of the pickerel
I may be a bit prejudiced, seeing as how I fish out of FM's boat, or maybe he has cast some tricky spell on me, but I sometimes prefer the pickerel over just about anything else. the tricky part is the bones. you have to make a few cuts once you have fillets, but it is WORTH IT. I like it best cut into long strips, battered with your choice, and fried up. the meat retains alot of its natural oils and juices, which make for tender, white nuggets. I dont know which one I like better; catching big ole' southern pikes on road runners, or the fish fry afterwards.

O K ya'll got me here, what's a jackfish and whats a pickerel? Are they a shoe-pic in disguise?

Dang Mark, You allways seemed so normal! I was sure you wouldn't eat one of them toothy critters. I guess FM will have you eating Possum and Coon next, LOL.
I have cooked up a few Jacks in the past and like Yellow bellys, their not too bad. Its kind of like riding a scooter, there a lot of fun but you don't want to be seen on one. If I get hungy enough for fresh fish though, I'll try just about anything once. Seeya Don
