I know a guy that breads them and then freezes them. This is a deep fry method only. No need to thaw, just drop em and 4-5 minutes later, done.
Has anyone ever tried freezing morels? And if so, are they any good after you thaw them out and what is the best way to keep them? I wanted to try vaccuum sealing them, but I didn't know if that would work, and I definately don't want to ruin them if there is a different/better way to keep them. Thanks.

Thanks for the link fillet, I think I'll try it, but I'm not sure I will wait 18 years to get them out to eat!
Just had some frozen ones this past weekend.......this is how I do it.
1. Clean your morels and let them soak in salt water over night.
2. After rinsing off after soaking, place shrooms on towels to get off as much water as possible. If there is a nice breeze outside I do it there, sometimes I use a fan.
3. After getting rid of excess water, prepare your shrooms just like your are going to eat them that night. Roll them in flour, or what ever your breading choices are.
4 After breading, place shrooms on cookie sheets with wax paper. Place in freezer overnight.
5 Take out cookie sheets, transfer frozen shrooms into ziplock baggies or vacuum seal. Throw in the freezer.
6 When ready to cook, get your butter or oil hot and ready to cook. Take frozen shrooms directly from the freezer and place them in.
Been doing it for 20 years, and they are great come October thru the start of the new season. Hope this helps.

Easiest way to keep Morels it to dry them. Best way I have found is to cut them in half and place them on a window screen. Let them dry till they are crispy. I usually finish mine off in my dehydrator but you do not have to do this. If you aren't going to keep them to long just put them in a brown paper bag. If you are keeping them for a long time freeze them.
Not sure how to freeze em' , but only 85 will fit in a egg basket. The wife took her egg basket with us tonight, an it works better for a shroom basket than a egg basket ! No snags on the briars . Works great !

Heck with freeze drying,,I been eaten them for the last 5 nites,,and tonite had 2 - 11" x 14" skillet fulls,,I don't care what anybody says,,you can never get tired of eaten them..but the best way all the gurus preach is to deydrate them,and then seal them in fruit jars or vacumn seal. Rico seems to have a excellent sounding way to save them..I might just try it,,but I need to go fishing as I have been spending all my time huntin shroooms! lol
