a stumbling like crazy , some are even shutting down ! this mess caused by this pandemic is hard to believe .
The good news is my meat packing facility is still running and I think I have enough bacon/venison burger meat ground up to last a couple more months until I reopen the meat packing plant .
when I put the 2 whole hind quarters in the freezer back in December , I had no idea how handy they would be 4 months later . gave one to my son in law to grind and I did the other for my home ….dumb luck prevails I suppose …
I sure would miss an occasional cheeseburger if I had to depend on our current infrastructure , of course I could hit the line at the burger place and chance having someone touch my food that has the virus I suppose or maybe just the bag or the receipt .
but for the time being I think I will eat what I prepare and know how it was handled and by whom , just saying ….and...
thanks little buck back when for the cheeseburgers my friend and even though I hate to admit my wife was right (and she was) about just shoot an ok fat little buck to eat , nevermind the horns I am glad I listened to her advice

i don't have many doe around my place , but to be sure lots of young bucks . so young buck is whats for dinner .
the burgers done with bacon when you grind are really tasty, of course the onions and garlic and mesquite seasoning i added before i dropped them in the cast iron didn't hurt them none either .

My mom and dad brought my brothers and I up to do exactly what you are doing. I butcher and take care of my own meat weather it be small game,big game or fish. I sure am glad that we put 3 deer in the freezer. My son killed his first buck and I put 2 doe down. We are enjoying the chops and steaks and I smoke summer sausage and trail bologna.

we decided last year that even though it is cheap and easy to drop them at the processing plant we are less and less comfortable as to what we get back and how it was handled ,wife is worried about lead and I often wonder about if its even my animal and to top it off I opened up a package of tenderloins from a hog I didn't want to mess with last year and one was cut down the middle about in half due to fast sloppy knife work ….not good

Yep us hillbillies don't look so dumb now lol. We eat wild game most of the time at my house. Virus or not. Store down the road has plenty right now but that first week it was empty. However I would like to add one more Turkey to the freezer.
