First knife was given to me for a high school graduation present from my grandma, a Gerber EZ Out with a fine blade. Lost it in one of my moves during college, broke my heart.
My everyday carrier is a Gerber Harsey Air Ranger. It's about 2 oz and stays as sharp as I need it to be.
Got a hunting knife from my father in law a year ago Christmas, a Gerber Profile with a guthook. I've used it on two deer and a hog, and it's worked great for me! Holds a good blade, too.
But this new knife I think is gonna change my life. It's a Piranta made by Havalon. Basically it's a knife handle with a fixture for attaching surgical scalpels. Guy I learned about it from had processed 6 deer with his current blade and still sharp as a laser.
