I pan seared some filets , with lots of tony chachere's. put on some rice to boil. Prepared Louisiana brand Etouffee mix according to package directions
Added a can of Rotel and a tsp of cayenne pepper to make it more creole.
Rice on the plate , fish over rice , smothered this with the Etouffee mix
It was very good , I think I will do it again this weekend
I think I will plate it differently , rice / etouffee/ fish on top.
no pics , but I took a plate next door , Rick gave it a 12 out of 10

All of us from South Louisiana will eat anything placed over rice, covered with a rich sauce or gravy. Your approach sounds very simple, creative, and most of all delicious. Thanks for posting.
