Default Dinner last night - tacos

    Very simple tacos
    What you need
    -crappie fillets
    -corn tortillas
    -shredded cheese of choice
-cilantro lime dressing. You can use spicy ranch, cilantro and avocado or tarter sauce
-lettuce, tomato, sour cream, salsa or whatever you like on tacos
    - a lemon
    -seasonings of choice

Heat 2-3 tbsp of olive oil in skillet big enough to fit crappie fillets. In a second skillet heat about 1/4 inch of veg oil to fry tortillas

I laid the crappie in the pan after oil was hot and seasoned with mrs dash garlic and herb, a little pepper and a Cajun season I had left over from frying turkey. I then squeezed on some lemon juice.
Flip once to brown both sides.
Heat tortillas in the oil individually to desired crispness. Pat dry with paper towel and fill with fixings of your choice.
Top off with an adult bev, in this case black velvet and ginger ale.

Even better with grilled crappie even though it's a pain.
