    Default Picante Fried Fillets


    Tried this recipe today and it was absolutely fantastic.

    Take fillets and dip in flour for a light coating.

    Then take the coated fillets and dip them in Picante sauce, rather than your traditional egg wash. I used Pace Picante sauce - medium heat.

    Next dip the fillets in your favorite dry batter and deep fry.

    These fillets turned out to be some of the best I've ever made, they have a great wonderful flavor.

    Had some friends over and used this recipe on crappie, bluegill, and yellow stripe fillets. Thought I was going to have a few leftovers with all the fish I was frying, man was I wrong, they ate them all. This is one you all have to try.

    Lately, I've been using Zatarains Fish-Fri dry seasoned mix. We bought a large container from Sams club. Its a good all around dry mix for fish.

    Alot of times I make my own with a 2/3rd flour and 1/3rd corn meal. Then I add Emerils Original Essence seasoning.
