I think crappie will hang around both. I would go with PVC since most depth finders will not pick it up. That way everyone would not be able to see your structure.
going to put in some stake beds around pier while water is down. need opinions on weather I should use pvc pipes or wood 2 x 4. have both so that's not an issue. do yall think crappie would hang around one better than the other.

Wood is probable better, but PVC is a one time investment. As long as nothing hits it you'll be catching fish around it for decades.

do us all a favor. put pvc on one side of the pier and wood on the other and keep a count on which produces more.

Give it a try. Like alexava said you can always replace the wood with pvc, if it porduces better than wood.

FYI, PVC often takes longer to begin to hold fish. Not sure why, but I've dropped PVC and caught minimal or no fish for months, sometime close to a year. Once they show up though you have a sure thing forever.

I have read that it takes longer for the algae to grow on the PVC and that is mostly what attracts the bait fish. Some say to roughly sand the PVC before dropping it to help the algae get a better start.
