I used to finish about 1800 head of domestic hogs a year, guessing domestic hogs would skin about the same I always skun them hanging from the back legs like a deer,and would cut slits in the skin to hook my fingers in to pull down on the hide ( it was greasy) as I cut.
We hauled hogs every week to market, about once a month the local butcher in town would call, and we’d drop 5-6 off when we passed through town, he had a skinning table and a block and tackle to pull the hide, similar to the video…He was pretty fast around 10 minutes a hog, a little longer when we’d be visiting
