Crawfish enchiladas, corn maque choux, and dirty rice works nicely this evening. Had to tend to this early this evening because I've got lots of things to do this weekend.

Cinco de Mayo is not to be confused with Mexican Independence Day, which occurs on September 16. Cinco de Mayo is sometimes mistaken to be Mexico's Independence Day—the most important national holiday in Mexico—which is celebrated on September 16, commemorating the Cry of Dolores that initiated the war of Mexican independence from Spain. Just sayin margarita drinkers.

I thought cinco de mayo meant drink 5 margarita's.

In Mexico Cinco de Maya is the celebration of the victory of the Mexican army over the French in the battle of Puebla, mostly military parades. In the US many think it the celebration of Mexican Independence but that's on Sept 16 but Cinco de Maya is a holiday created by the liquor distributors to enhance their sales by encouraging people to drink more. They've been very successful at that.

Actually it dates back several centuries. The French had established an active trade with Mexico. One of their creations was mayonaise, which the Mexicans grew very fond of and traded their native Agave, used to make Tequila. Because of the primitive travel in those days it was only possible for the French to deliver one shipload of mayonaise a year. One year in late April a ship embarked from France carrying the next years supply to the Mexicans, who eagerly awaited it's arrival.
Unfortunately the ship encountered a bad storm and on May 5 it was lost at sea.
The Mexicans were so devastated by the loss the government declared a day of mourning to occur on May 5. It became a national holiday in Mexico, commentating the "Cinco de Mayo."
