Have always just played with distance they are trolled and speed to develop a pattern and went from there. Different types of blades will change how much lift you get out of your rigs as well.

For walleye fishing for 5 years, I got running rigs down. I use Dipys in a staggered pattern, 0 setting straight out the back, 1-1.5 for the farthest pole in the holder, a 2-2.5 in the middle, and a 3.5-4 on the forward most pole (8 poles total). You could use ball sinkers of 3-5 oz depending where your marks are on your chart. I would avoid using Jet Divers at all costs, I never had them run true when the stars align and the moon is new. Those are the only methods I know of right now, but dipsys are worth the money. They run 25-27 feet at 150-200 feet back and around 1.6-2.2 mph. Play around a bit.

Also look into using line counting reels and snap weights.
Even if you elect to not use that certain technique - it cant hurt
to learn more stuff over the winter.
I use Med 7ft ugly sticks with two cheap line counter reels.
Read up on the dive charts that people have posted online.

I'm late to the party Danny, but all u need are inline weights..fish shaped weights,u can get them in several sizes..I make my own harnesses..easy..usually have a 4-5ft leader, attach to the back of the inline and line from reel goes to the top front..Bass Pro has them, I believe Uncle Josh also..I don't have a link, but go to Rednek Outfitters, they have a depth chart on their site..I use it, I keep a photo of it on my smart phone..handy..your harness will trail straight behind the weight..FWIW, I've been doing this for 25 yrs..i toll Lk Erie for walleyes a lot using planer boards..as Cincinnati mentioned, snap weights also work well..line counter reels make this easy to do..if u don't have LC reels, u will have to do the 'pull method' or count passes on casting reels.....good luck 5
