Budweiser Beach.
My GF likes "the beach" and I like to fish. I'd like to go somewhere for a nice fishing trip, but I'd also like to find her a clean, sandy beach where she can relax and do her thing (it doesn't have to be accessible by land). I don't know if Pickwick has anything like that or not. I'd love to go over toward Chattanooga as well. The MS river has some nice sand bars, but she likes to get in the water, and that's a huge no-no on the mighty MS.

I'd go to Sardis, and drop her off at Dark Hallow. You could fish towards Holiday Lodge or Greasy Creek, come back, check on her, and fish some more. The shore along there is usually pretty nice.
If you don't mind catfishing, the Mississippi River always has sandbars when the water is down a bit. Never really paid attention, but I saw a beach at Pickwick Landing State Park last time I was there (quite some time ago).
Pickwick park is a really nice place to hang out while you fish....
