I see a lot of people on here and other sites talking about how bad they hate the silver (ones that jump) and bighead carp (don't jump but get to be 100lbs in cases). They are obviously an invasive species and a nusance, but there is some good news they taste great!
I have been eating them for years now along with most anyone I introduce to them. I know it can be hard to think of them as being good table fair since they stink and can make such as mess of your boat, but they really are fantastic. They have extremely white meat and when cleaned properly not many bones.
I am attaching a few links to some videos by the USGS's carp expert that show how to properly clean them and prepare them to eat. I strongly encourage yall to try one the next time you find one jumping in your boat.
