    Those are such good looking crappie fillets it probably didn't matter how you cooked them, they were going to be good. I have not tried blackening them but those look really good. My staples are fried, grilled, and in the oven with a parmesan bread crumb mixture. Did you blacken them in a cast iron skillet?

    Yes, in a cast iron skillet.

    I fry all my fish in a cast iron dutch oven unless there's more than 4 people eating.

    Once you get the heat where you want it cast iron keeps it there.
