Just curious about when you will call a trip off. I thought I was going yesterday cause winds were very light but after I went out , I bailed.
Is there a cut off for you?

When there's water coming over the bow of the toon It's time to head in.
Once I'm out I hate to call it a day so I'll stick it out until it starts white capping.
If I'm home and look at the reports saying 10plus, I close the garage door and stay home because 10 plus means gale force winds.
The mono hulls can handle more wind
I usually don't let the wind bother me if under 15. I just change tactics as I carry tight lining and pulling rods with me most of the time. My champion handles wind as good as you could want and I bought 2 30 in wind socks to help slow it down by putting one out on each side of the boat about middle ways.
It would depend on the time of year. and the tactic being applied. Cold is never a deterrent if the fish are biting or if I really want to go fishing. The wind can definitely be a factor when trolling. If one pole jigging, I can fish in near hurricane force conditions, and have done it on numerous occasions, with good results.

Never know if they are biting if you never get out there no matter the weather. I draw the line if the safety factor increases and no way to apply any mitigation measures. I can dress the for the cold.
Lightning is about the only thing that calls it for me. When it is windy I just look for a place out of it.
