    I gutted and oiled up a couple of those smaller SH and grilled em skin/scales and all for a few minutes on each side. The skin and scales peel right off. Then I flaked the fish off the bone and mixed it with chopped garlic, onion, red pepper and pasley. I made a slaw of shredded cabbage with a vinegar dressing and mixed in some chili powder for topping. Works great for leftover grilled mahi too. I always grill extra just for the fish salad or fish tacos the next day.
