We DO like fish.....MOST fish that is. Striper is one we like and find that cooking a bit on the long side gets them the way we like'em. We like our fish a bit drier or firmer than quick-cooked...

We have eaten SW and FW stripers. Done the same day, same pan, same meal. Danged little difference. Yes, remove red meat.
We preferr whatever fish is cooking in the pan at the time.

I don't see why mooching a baitfish would not work, as long as you were at the right depth or along the right current seam.
If you try trolling or tossing lures may we suggest you speed-up...
