When I fry a large batch, I put a cookie sheet in the oven at 170 degrees and layer it with paper towels between each layer of fish. Keeps them hot and all can be served at one time.

I use an egg wash also, but I learned from a good chef to use rice flour instead of regular flour. It does make a difference. After the egg wash, I dip them in chrushed Ritz crackers - great flovor....

Used to waterproof all my maps for Canadian canoe trips using Thompson's water seal. It works on paper as well as wood. Soak the paper for a minute and then hang on the clothesline to dry.
