the old dudes on the fishing piers on the coast love the sheep head, if I am not mistaken, they catch them with sand fleas right beside the barnacles on the parts of the pier in the water.
Never ate them, they say they are good

I've caught the gulf type and called em sheepshead. the ones caught out in the clean gulf were delicious, but the same fish caught in the inland waterway tasted somehow dirtier not pleasant. Now the drum just tell me i'm fishing too deep. Good fighters on light tackle wouldn't eat em though. now red drum from the coast are good eating if you trim the red meat off the sides
