    Always a bit hot with alcohol, that smooths out over time. I have yet to see a fermented product that time does not improve the taste. Meads are different than Country wines in that they have a much longer shelf life. A great country wine still needs drinking within 5 years.

    Just a quick picture of a glass of Tripletail homemade wine (Blueberry - Plum - Meyer Lemon). All this writing is making me thirsty!

    At 15 months old its hitting it's break over point where the alcohol is smoothing out along with the young wine bite.

    I understand the writing making you thirsty, but the workin' gotta make you even more thirstier! You're "triple tail" plum mad with the workin' part. Yep, you need lots of wine.

    I'm on a mission to get the Camper back on Ross Barnett by early April if possible. The Hog Fest trailer was totally unexpected, The Caddy had to be moved so the Camper could be parked where it is to replace the roof, the lift had a deadline on it which forced me to fix the previous trailer to put the lift on for storage here, the Greenhouse cover had to be replaced so I had somewhere to store the Lift on the trailer & Caddy. I think they call this Standing Up Dominos, each project tilts right into the next. I'm installing a Heat Pump on the camper this time, we are plugged in somewhere almost all the time so it will save the need for the Furnace unless Boondocking.

    Default Mead Stabilizing for Back Sweetening

    Well storms today has me in the kitchen working on the 2 Meads I made last winter. Both needed Racking first as I left them on a heavy Yeast Cake for added protein development & release into the fermentation while aging. This helps to provide added mouth feel and body. Usually I'm filtering here at this stage but with the impurities in the Honey used for the back sweetening process I have to wait. Both Meads are a bit cloudy because of that.

    Not the greatest picture but you get the point. Now a 24 hour wait is required before adding enough Honey to sweeten to my liking. The Lemon Mead really tastes like a beer, can't put my finger on which but beer none the less. A flavoring may be needed because beer is not my favorite beverage by far. The Spiced Mead tastes fantastic. The cayenne pepper is not present as much as expected. The cinnamon is perfect.

    Raw Honey has all kinds of stuff in it, wax, bee antennas, unmentionables & undesirables so after the back sweetening is complete I will filter the product back into their original containers for bottling removing the cloudiness at the same time.

    Lemon mead, how much for the lemon mead, sounds like my style. Do you sell it by the carboy. Do you deliver. Or do billbob and I have to belly up to you place and drink till we drop. Billbob wears a helmet so when he drops it won’t hurt him so bad. lol. Funny thing is, I’ve had beers with billbob for the last 20 years or so and I’ve never seen him drunk. lol

    No money, I lost my 2 favorite fishing ball caps running a boat in all this wind lately. We can trade. I have some flavorings on their way here and Lemon is one. Seems I should have waited to put the lemon juice & zest in till in Secondary fermentation. I think it needs a little boost of lemon flavor to get to a perfect balance in taste. We can add lemon flavor and keep drinking till we think it has been achieved or fall over whichever happens first.
