    Always a bit hot with alcohol, that smooths out over time. I have yet to see a fermented product that time does not improve the taste. Meads are different than Country wines in that they have a much longer shelf life. A great country wine still needs drinking within 5 years.

    Just a quick picture of a glass of Tripletail homemade wine (Blueberry - Plum - Meyer Lemon). All this writing is making me thirsty!

    At 15 months old its hitting it's break over point where the alcohol is smoothing out along with the young wine bite.

    I understand the writing making you thirsty, but the workin' gotta make you even more thirstier! You're "triple tail" plum mad with the workin' part. Yep, you need lots of wine.

    I'm on a mission to get the Camper back on Ross Barnett by early April if possible. The Hog Fest trailer was totally unexpected, The Caddy had to be moved so the Camper could be parked where it is to replace the roof, the lift had a deadline on it which forced me to fix the previous trailer to put the lift on for storage here, the Greenhouse cover had to be replaced so I had somewhere to store the Lift on the trailer & Caddy. I think they call this Standing Up Dominos, each project tilts right into the next. I'm installing a Heat Pump on the camper this time, we are plugged in somewhere almost all the time so it will save the need for the Furnace unless Boondocking.
