White is good but not as good as the yellow IMO. You definitely need to cut the red meat out of the white but it is good firm meat. The yellow has no red meat and to me is a little sweater. I prefer either one over a crappie.
I love me some yellow perch! But am wondering if white perch taste the same?

Huge difference between the 2 fish. I grew up on lake erie smelt and yellow perch.
I keep yellow perch that are 8" or bigger & any white perch I catch.

White perch in Ohio are considered an invasive species that can and will decimate other fishes hatcheries/beds. I caught both those fish pictured above in an inland lake near me. Not good!!!

Go to the store and buy a box of burgers. Eating the burgers would be like eating the yellow perch. Eating the box would be like eating the white perch.
Most people up here in ohio won't even both eating white perch. They simply kill/destroy them whenever they catch them leaving them for the seagulls.
I catch a lot of perch when I go panfishing/targeting bluegill.
yellow perch are in the walleye family ,the best of the best along with crappie out of fresh waters .
white perch are in the bass family and not even a close second in flavor best i can tell you
