Sounds like your equipment is off for the target species. Try to get some lighter line and lures. Say 2 or 4# line and 1/32 or 1/64 oz jigs. Thats not exact but gives you idea of closer to where you need to be.
I've recently gotten into fishing, and, armed with my 6 foot rod, 10 pound line (I think it's monofilament), and some 1/8, 1/4, and 1/2 ounce spoons, as well as a 1/8th ounce roostertail spinner I found on a tree near the bank, I wanted to catch some sunfish. I could see some sub-adult bluegill about 5 feet off the side of the pond where I was fishing, but I only got a single bite. Are there any tricks to catching sunfish? Or is my equipment not suitable for the job? Or do I need to be more patient?

Yeah, I figured that my equipment wasn't suitable. Out of curiosity, are there any species that my equipment would be suitable for? I'm not too picky about the type of fish I catch, I just knew that sunfish were relatively easy for beginners.
Around creeks, drains, and trees and downed brush throwing the rooster tail might generate some Bass. The lighter line would let you throw a 1/32 or 1/16 rooster tail for some of the bluegill you can see. The bigger stuff eats them too, and don’t forget beetle spins. Cheap and they work.

Too big to consistently catch bream, IMO. This would be good for bass, though.
It sounds like you've got a decent outfit for bass or catfish. For bream, get a light or UL rod and reel combo and spool it with no more than 4# line. Jigs (1/32 oz) are good artificial baits, as are small swimbaits.
I would have a two rod setup, one just dedicated for float fishing, and another dedicated for just for small lures.

So I think that the key takeaway here is that my equipment is oversized for panfish. I'll look at buying some 4 pound line, as well as some spinners in 1/16th and 1/32th of an ounce sizes. Did I understand everything correctly?

Also make sure your rod / reel is rated for that size line and lures. Be hard to do anything on a heavy bass rod and light line/lures. Plus having the right setup will increase the fun when catching them.
