I had to carry out my civic duty to thin out the bluegill population in my friends pond. It's a tough job, but someone has to do it. I ended up catching some nice chunks on dough bait(the fish are pellet fed in there).

I filleted them out today. I then rolled the fillets in yellow mustard, and then coated them with a breading that was 50/50 flour and cornmeal, with a dash of tony chachere's cajun seasoning and a dash of garlic powder for extra flavor. I deep fried them in a cast iron skillet.

I hit them with a dash of crystal louisiana hot sauce and plated them with some grits and okra. Not a bad meal at all.....
