You pull the plug when you arrive back home and have a couple of beverages when finished fish will be perfect!

I keep them in the live well. When I get on shore I place them alive in a ice chest and take pictures and then put ice on the fish. If you let the fish get hot and spoil just as well be eating sardines

Jokes aside about the table picture I'm old school and want them alive when I clean them. They bleed out better. Kinda like cutting the tails off catfish and letting them bleed out before filleting. Makes it a lot easier and less hassle to clean up.
Those pics you are talking about are just that, posing. you have had them on ice or usually in water in LW or in cooler or we use 5 gallon buckets. Then you line them up for the pics and yes they do flop but you just wait till you can get them up and if couple are really flopping you do pop them in head and then after pics clean them first. that's all.
In Kansas by law if fishing in an ANS lake all fish have to be dead prior to leaving the lake. "ANS Designated Water – Live fish may not be transportedfrom this water"
I prefer to keep them alive until I load the boat then ice them as soon as I find the first place with ice. I have harvested a number of fish and they deserve to be properly kept at the peak of freshness on ice. Waste not, want not.

Lifelong Okie here, but Arkansas definitely puts money in their parks. Oklahoma keeps cutting budgets on ours. The amount of revenue fishing brings to this state in taxes. It would be nice if it went back to them so that out of staters don't decide to go somewhere else cleaner or more updated.
