    Default Crappie batter recipes


    Looking for a little change instead of just using yellow cornmeal in 400 degree peanut oil.
    Anyone have a favorite batter recipe you would be willing to share.

    While not a batter, one of my favorite ways to cook crappie is blackened. Old bay blackening spice. Coat both sides of crappie, put a teaspoon of oil in a skillet, get it hot, throw fish in the skillet 2 minutes or so on each side! Mmmgood with some coleslaw, and fast.

    My dad uses a seasoning called Andy's, not sure of the spelling. It beats my wife's straight cornmeal mix hands down. Wish I knew where to get some around here.

    Is it a mixture for a batter or just a seasoning?

    Wash your fillets, dredge in: flour, beaten egg, then Panko seasoned with Lowry's Garlic Salt. Fry golden brown and top with a little fresh lemon juice. Can't get much better.

    The Andy's mix is a cornmeal mixed with seasoning. I think he said it comes in a 5lb bag.

    If you want to try something other than fried, I have a awesome recipe. First a bit of history. :rolleyes: One evening this spring on my way back from a fine days fishing on Eufaula I decided to stop at the quick stop in Canadian to purchase a snack for the road. Upon opening and tasting a bag of Jalapeno Cheetos I decided there must be some other use for these fiery hot coals other than eating them straight out of the bag. As the wheels turned upon on the road the gears in the mind likewise churned about what to do with this bag of Cheetos, what ensued was a life changing event for all who have tasted this recipe (sorry for the exaggerations, I am a fisherman after all). Crush bag thoroughly (helps to empty contents into a gallon zip lock first). Coat fillets with sour creme. Roll fillets in the crushed jalapeno Cheetos. Bake on foil for 20 minutes at 500. Do not turn. Not at all like other baked recipes, it comes out crunchy like fried but without all the oil. You may thank me later
