    Default Anyone have a killer beef jerky recipe?


    I know it's not crappie related but I've been firing up the smoker every weekend and it has just dawned on me that I have never ever tried to make jerky in it. So ordered me a Vacuum marinator and have been searching the net for recipes. Have 7 of them to try from pepper, to teriyaki, to a soy and garlic.

    Anyone here ever smoke jerky? You use hickory? Maple?

    And if if you have some super best ever jerky recipe you don't mind sharing please post it. Or can pm me if you want to keep it secret.

    Maybe if I can find a really good one I can even trade Redge a few pieces for his favorite fishing spots for the week! Much rather that then bail hay or whatever other backbreaking work he always seems to have going on at the lake. Guy is working on his retirement completely backwards!

    Don't use a smoker to make jerky. The meat absorbs too much smoke and its bitter.
    Use a dehydrator and make a 50-50 mix of soy sauce and teriyaki sauce with a little Worcestershire. Marinate the meat for an hour or two, no longer.
    Lay the strips on the trays, then sprinkle with what ever spice appeals to you.
    We use garlic powder, onion powder, cayenne pepper. Never use salt. The soy has plenty.
