For those that have never been to a BBQ competition, I thought I'd share some of the pics of some of our turn-in boxes. We competed in Kansas City BBQ Society sanctioned competitions so there are certain rules that had to be followed. KCBS allows for certain garnishment in the turn-in box like parsley or green lettuce -- unlike the Texas sanctioned events which allow only a piece of foil under the meat in the turn-in box.
The turn-in boxes must contain 6 easily identifiable entries so each judge at the table gets their own sample in which to eat in order to judge the entry for Appearance, Taste and Tenderness. For KCBS, there are 4 meat categories -- Chicken, Pork Ribs, Pork Butt/Pork Shoulder and Beef Brisket.
