    Default Country sausage


    Since the weather has cooled things down a bit and not fishing , I’m wanting to make some breakfast sausage. I can’t remember how my father and my uncles made pork sausage. Just wondering if any of y’all have a good recipe. Any help would be appreciated.

    Should be some YouTube videos out there. We used to make our own when I was young. Bought the seasoning at the local grocery and it was trial and error till you got the right combination. Personally, it’s hard to beat the Jimmy Dean brand,mild patty sausage. For smoked links I prefer the Country Pleasing.

    This mix is about as good as it gets. A little goes a long ways, and too much can get salty... This bag will do 25 pounds... Find it online easier than in stores... Name:  sausage.jpg

    That's what I use. Get it at cash saver in Oxford. I grind 2 deer hind quarter with a 10 pound Boston butt and a bag of that seasoning. Never did just the pork and the seasoning. I know it would be good. When they run a special on Boston butts buy the 2 pack and 1 pack of season and that should be perfect. Run it threw your grinder twice.

    Be sure to taste test a small batch. At my house we like to use 1.25 times the suggested rate.
    Everybody’s different, adjust it to the way you want it.

    I like the Leggs seasoning the best.just a reminder try to stick to 25 lbs of meat or just a tad less.I like to throw about 4 lbs of bacon ends into the grind as well.best of both worlds.

    Thanks guys for yalls recommendations. Don’t know which pack of seasoning I’ll try first. I have seen these in stores here in Batesville just wasn’t sure how they would turn out. My dad and his brothers could make the best years ago just adding the seasonings till they got it the way they liked it.

    Does the deer make it a breakfast sausage or more like a summer sausage?
